'Strong' is one of the most persistently misused words in coffee. Separating caffeine content, flavour intensity, and extraction strength gives you a framework that actually explains what you are experiencing.
'Strong coffee.' The phrase is everywhere, but almost never defined.
It is used to describe dark roasted blends, espresso, high-caffeine marketing products, and occasionally just any coffee that tastes more bitter than the person expected.
The problem is that 'strong' can mean three completely different things, caffeine content, flavour intensity, and brew concentration, and these three things are determined by three completely different variables. Conflating them is the source of some of the most persistent misconceptions in coffee culture.
1. Caffeine Content: A Species and Weight Question
Caffeine content in coffee is determined primarily by species, dose, and roast level. Robusta contains roughly 2.2 - 2.7% caffeine by dry weight, while arabica contains 1.2 - 1.5%. If you are consuming robusta in a commercial blend, instant coffee, or a deliberately high-caffeine product, you are consuming more caffeine per gram of coffee regardless of roast level.
Dose, the amount of coffee grounds used per unit of water, has a direct linear relationship with caffeine in the cup.
Roast level matters only marginally. Caffeine is thermally stable and does not degrade significantly during roasting. However, darker roasted coffee is less dense, since more mass has been driven off as water and CO₂. A dose measured by volume, such as one scoop, will contain slightly less caffeine in dark roast than light roast, because each scoop contains fewer bean cells. A dose measured by weight, such as 18g, will contain essentially the same caffeine regardless of roast level.
The implication: if you want more caffeine, increase your dose, switch from arabica to robusta, or both. Choosing a darker roast will not meaningfully increase your caffeine intake.
2. Flavour Intensity: A Roast and Processing Question
What most people mean when they say 'strong coffee' is coffee that tastes intense, bold, bitter, or full in character.
This is primarily a function of roast level, not caffeine. Dark roasts taste more intense because bitterness is amplified as chlorogenic acids degrade and as further caramelisation produces bitter pyrazines and furans. Heavy body from dark roasting creates a sense of physical 'weight' that is often interpreted as strength. The absence of brightness and complexity in dark roasts means the dominant sensory experience is bitterness and body, which registers as 'strong'. And natural processing tends to produce fuller-bodied, more flavour-intensive coffees than washed processing from the same origin, a 'strong' flavour character that is unrelated to caffeine.
Flavour intensity is about how much is happening on the palate and how bold the dominant characteristics are. It correlates with roast level, darker meaning more intense flavour, and processing, natural meaning more body and sweetness intensity, but not with caffeine.
3. Brew Strength: A Ratio and Extraction Question
Brew strength is the precise technical measure of how much dissolved coffee material is present in the cup, measured as Total Dissolved Solids (TDS) in parts per million or as a percentage.
It is controlled entirely by brew ratio, the weight of coffee grounds relative to the weight or volume of water. A 1:10 ratio (18g coffee, 180ml water) produces approximately double the TDS of a 1:20 ratio (18g coffee, 360ml water). It is also controlled by extraction, how fully the available soluble compounds in the coffee are dissolved, with finer grind, higher temperature, longer contact time, and more agitation all increasing extraction and therefore TDS.
Roast level affects extraction, since darker roasts are more soluble and extract more easily, but is not the primary driver of brew strength. A light roast brewed at a very high coffee-to-water ratio will be objectively stronger, with higher TDS, than a dark roast brewed at a low ratio.
This is why espresso appears 'stronger' than filter coffee: the brew ratio is extremely concentrated, approximately 1:2 to 1:3 versus 1:15 to 1:18 for filter, not because the coffee is darker or has more caffeine per gram.
The Three Variables: A Summary Framework
To avoid confusion: if you want more caffeine, increase dose weight, switch to robusta, or consume more volume. If you want more flavour intensity, choose darker roast, natural-processed coffee, or espresso-based preparation. If you want a stronger brew, higher concentration, increase coffee dose relative to water, or brew espresso.
These are independent variables. Changing one does not necessarily change the others. A high-dose light-roast filter coffee is strong in concentration but mild in flavour intensity. A single shot of dark-roast espresso is intense in flavour but not necessarily high in total caffeine relative to a large filter coffee using the same beans.
Species influences caffeine. Roasting influences flavour. Brewing determines concentration. These are three separate variables, treating them as one creates predictable confusion.
The Marketing Problem
The 'strong coffee' marketing category exists specifically to exploit this confusion. Products labelled 'extra strong', 'intense', or 'bold' use flavour intensity, usually from dark roasting, to imply caffeine intensity, which may or may not be accurate.
Some genuinely high-caffeine products exist, typically using robusta, or proprietary blends with elevated robusta content, sometimes with caffeine additions. These are different products from simply dark-roasted arabica.
If caffeine is genuinely your primary objective, reading the actual caffeine content per serving, where disclosed, is more useful than relying on 'strength' descriptors that conflate three different variables.
Decaffeination: A Note
Decaffeinated coffee is produced by extracting caffeine from green coffee before roasting, using one of several methods: Swiss Water Process, which uses hot water and activated charcoal to extract caffeine without chemical solvents; CO₂ extraction, where high-pressure CO₂ removes caffeine selectively; or solvent-based methods using methylene chloride or ethyl acetate.
Decaf specialty coffee has improved dramatically in quality over the last decade. Swiss Water Process decaf, in particular, can now achieve cup quality in the low-to-mid 80s on the SCA scale, genuinely specialty-grade decaf from quality origins processed with care.
The flavour differences between decaf and caffeinated versions of the same coffee are real but reduced in the best modern decaffeination: some acidity and aromatic intensity are lost, but the fundamental origin character of a well-grown, well-processed coffee can survive the process.
